Ultimate Vegan Burger

I spent two days in Orlando with Cassie during Spring Break, and we decided to make something wonderfully delicious. We succeeded. Oh my lanta, these burgers were AMAZING. Really, just phenomenal. I found the recipe on Oh She Glows' blog, someone who I have taken many amazing vegan recipes from. She has her post about these labeled as the "Perfect Veggie Burger." Both Cassie (who doesn't even like black bean burgers) and I would say she's absolutely right.

Ultimate Vegan Burger
1.5 Tbsp ground flax seed
1/4 cup warm water
1/2 cup grated carrots
1/4 cup diced onion
1/3 cup whole wheat flour
3/4 cup bread crumbs
1/4 cup almonds, toasted and chopped
1/4 cup sun flower seeds, toasted
1/2 cup cooked black beans, mashed
1/4 cup fresh cilantro, finely chopped
1 large clove of garlic, crushed
1 Tbsp soy sauce
1Tbsp olive oil
1 tsp cumin
1 tsp oregano
1.5 tsp chilli powder
Salt and pepper

Start off by preparing your flax egg because it has to sit while you make your other ingredients. Simply mix 1/4 cup of warm water with the ground flax seed and let sit for 10 minutes.

While the flax egg sits, prepare/combine the rest of the ingredients in a large mixing bowl. Then mix in the flax egg.

Screaming, "big girl, you are beautiful"

With slightly wet hands, form the mixture into patties. This batch should make about 4 burgers. Cook on medium heat in a skillet with a little olive oil for about 5 minutes on each side.

And multiply her by four

We topped these burgers with homemade pico de gallo and spinach. We also ate these burgers for lunch the next day and topped them with homemade guacamole, pineapple peach salsa, and spinach. Both ways it was wonderfully delicious. As a side for these burgers, we made cilantro lime sweet potatoes which are the delicious looking (and tasting) out-of-focus orange things in the pictures below. Cassie will be posting the recipe for that shortly. :)
